Moose stew a la Palin

3 slices bacon, cut up
2 pounds moose, cubed (see Note)
4 onions, quartered
4 potatoes, quartered
1 pound fresh or frozen green beans
4 bay leaves
16 ounces tomato juice (more or less, if desired)
Brown bacon in heavy pan. Add moose; brown on all sides. Add onions and saute. Add all remaining ingredients; simmer for 1 hour or until flavors are mixed and vegetables and meat are tender. Add tomato juice until desired thickness is reached. Heat through. Remove bay leaves.
Note: Because moose must be wild-shot, substitute elk or venison (available at

www.underhillfarms.com), elk sausages from Hot Doug's, 3324 N. California (
www.hotdougs.com) or beef.
